Though I typically appreciate a cold local beer on tap, I have been recently turned on to traditional cocktails during some of my travel adventures. The classic Moscow Mule has become one of my regular mixed drinks. Refreshing with a bit of spicy warmth that goes well with lighter dishes or holds its own on a summer day. This version uses a homemade ginger simple syrup that can be adjusted to your own taste. Enjoy!

Ginger Simple Syrup Ingredients and Directions

½ cup water

½ cup white sugar

3 inch piece of fresh ginger root, peeled and cut into small pieces

  1. Add water and sugar to a medium saucepan.
  2. Peel a 3 inch piece of fresh ginger and chop into small pieces and add to the pan. Note: The smaller you cut each piece of ginger, the more surface area you will expose to the boiling sugar mixture. This will give your simple syrup a stronger ginger flavor.
  3. Bring mixture to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let cool. Strain or remove ginger pieces.
