Nothing says ‘Christmas is coming’ quite like seeing jugs of eggnog in the grocery store. Sometimes I grab a quart, but for a more satisfying flavor I mix up my own at home. Using fresh grated nutmeg really adds to the depth of flavor. If you love the rich, creamy taste of classic eggnog, but don’t like the idea of using raw eggs, this recipe is for you. Of course, for an adults-only version, just add a splash rum, bourbon, or cognac for some winter warmth. This Holiday season, try making your own eggnog and taste the difference in quality and flavor.
Recipe makes 12 servings. Prep and cooking time is around 30 minutes.
Non-alcoholic Eggnog Ingredients
12 eggs
1 ¼ cups sugar
4 cups whole or 2% milk
2 teaspoons vanilla extract
1 teaspoon freshly ground nutmeg
2 cups evaporated milk (or 1 small and 1 large can, 5oz and 12oz)
2 cups half and half
Non-alcoholic Eggnog Instructions
- Combine eggs and sugar in a medium glass bowl and whisk until thoroughly combined. Transfer to a saucepan and stir in whole milk, vanilla extract, and ground nutmeg.
- In a separate glass bowl, stir evaporated milk and half and half until combined.
- Heat egg mixture over medium-low heat while stirring constantly to prevent the milk from scorching. When mixture reaches 160 degrees, remove from heat and slowly whisk in evaporated milk mixture. I use this instant read thermometer to monitor cooking temps.
- Cool slightly before tasting. Add more sugar or nutmeg, if desired, before transferring to an airtight pitcher. Refrigerate overnight or until thoroughly chilled. Serve in mugs and garnish with whipped cream and dash of nutmeg or cinnamon.
