Quick Pico de Gallo Recipe
If you’re looking for an alternative to the often over-salted and acidic store bought salsa, or want to recreate the fresh flavors of a good Mexican restaurant, try this pico de gallo recipe. It’s quick to make with easy to find fresh ingredients. Pico de gallo, also known as salsa fresca, is perfect with tortilla chips or as a topping for tacos and other Mexican food or even with grilled fish. You’ll never want to buy another jar of salsa off the shelf again!
Ingredients
2 medium tomatoes, finely diced (better on the firm side than overripe)
1/2 cup onion, minced (sweet red or white a good option or go with yellow for milder flavor)
1 jalapeño, remove seeds and mince
Juice of 1 lime (approx. 2 tablespoons)
4-6 sprigs cilantro, chopped
salt
Preparation
Add tomato, onion, cilantro, and jalapeño to bowl and mix. Add salt and lime to taste. For added heat, add a hotter variety of pepper to the mix. Minced garlic, or garlic salt can also be added for a different flavor. Play around with the ingredients to fine tune the recipe and make it your own.
Quick prep tip: Roughly chop the tomato, onion, jalapeño, and cilantro and use a food processor to mince everything. A good smoothie machine will also work, but use an extra cup food prep since flavors can be difficult to wash out and nobody likes onion smoothies.
