Simple Slow Cooker Pork Chops

One of the benefits of using a slow cooker is supposed to be easy prep work. However, I often find the recipes in cook books require several cooking steps before the ingredients go into the pot. At that point you’ve lost the time saving factor and might as well just finish cooking. This pork chop recipe is about as basic as you can get. Quick to put together, no pre-cooking, and nothing but flavor when it’s ready. This version is designed for a 6 quart cooker, but could easily be halved for a small crock pot. Enjoy!

Ingredients

8 boneless pork chops, 1/2 inch thick

1 large or 2 medium yellow onions, sliced

8 ounce package sliced fresh portabella mushrooms (or whatever type you can find, jarred/canned mushrooms will work too)

2 1 ounce packs of dry onion soup mix

2 cans (~11oz) condensed cream of mushroom soup

1 teaspoon dried thyme (optional)

1 cup water

Prop Tip: Use a slow cooker liner to make clean up a snap and also to carefully transfer food into serving dish or storage container when finished!

Directions

  1. If not using a liner, grease the slow cooker pot.
  2. Mix soup, water, onion soup mix, and thyme together in a bowl.
  3. Pour 1/4 of mixture in slow cooker to cover the bottom.
  4. Add pork chops, then onions and mushrooms.
  5. Pour remaining soup mixture into slow cooker.
  6. Cook on low 6-8 hours until pork chops are tender and onions are cooked through.

Serve with a side of veggies, mashed potatoes, or even over egg noodles. These pork chops are amazingly simple and packed with flavor. If you have any adjustments or modifications to the recipe please feel free to share in the comments section.
